Vadavan Chicken Curry

This Vadavan Curry recipe is basically the same recipe as our British Curry recipe, using Vadavan instead of the British Curry. You can use any meat or fish for this or make it vegetarian by using potatoes and peas or cauliflower or any vegetables of your choice. Play and experiment. Serve over couscous or rice or just as it is.

1 Medium            Onion
4 Cloves              Garlic
2 Tbs                  Olive or coconut oil
1 LB                    Skinless chicken breast or any vegetables or fish, etc.
2-3 Tbs               Teeny Tiny Spice Co. Vadavan
1 (16 oz) Can       Organic coconut milk
1/2 tsp                Salt
 
  • Cube the chicken or dice veggies & toss with Vadavan spice. If using fish, just coat the fish. It will break up when you sauté it in the pan.
  • Add chicken or fish or vegetables to a sauté pan and brown. This should just take a few minutes.
  • Add coconut milk and salt.
  • Reduce heat to low and gently simmer, partially covered, for 30 minutes.
  • That's it!
