Spinach & Blue Crab Stuffed Shells
with Emeril's Vodka Sauce



1/2 cup Mozzarella, diced
1/2 cup Ricotta
1/4 cup Prosciutto, diced
1/4 cup Parmesan cheese
1/2 pound crab meat
1/2 cup blanched spinach
2 egg yolks
2 teaspoons chopped garlic
2 tablespoons chopped parsley
2 tablespoons chopped basil
16-20 blanched pasta shells
1 jar Emeril's Original Vodka Sauce
salt and pepper to taste
 

Combine all ingredients except shells and sauce in a medium bowl. 
Mix well.  Spoon into shells.
Butter casserole dish and dust with some of the bread crumbs.  Arrange the shells in even rows in the dish.  Pour sauce over shells, sprinkle top with remaining bread crumbs.  Bake at 350 degrees for 40 minutes.
