A Portuguese sausage that is mild, lean, and full of spices. These spices are a secret blend (over 100 years old) and when the meat is slowly smoked and cooked in a smoke house... you can imagine the delicious taste of the final product!!! These sausages are great for sandwiches, chili, stuffing, pizza toppings, or on the grill. Linguica is approximately one pound.
Sausage lovers will find Linguica and Chourico to be very versatile, adding a special touch to many recipes. The most popular way of preparation is to cut these sausages into three inch lengths, slice in half lengthwise, pan fry or grill until sizzling. Then serve as a sandwich on a hamburger bun or bulky roll.
Similar to kielbasa but with
its own unique flavor, Linguica is a mild pork sausage still manufactured
according to an old Portuguese recipe. It is a fine blend of lean pork with
a mixture of such basic spices as vinegar, salt, paprika and garlic. Stuffed
into a natural casing, Linguica is then smoked until the special flavor and
federally required temperatures are reached.
Other exciting ways of serving Linguica could be with eggs, as a meatball substitute with spaghetti, in an omelet or as a zesty topping on pizza. Packages of Gaspar's meats average approximately one pound.
