Teeny Tiny Spice Co. of Vermont Recipes
We encourage you to use
the Teeny Tiny Spice Co. of Vermont spice blends in the dishes that
you normally cook. For a rule-of-thumb starting place, use 2
tablespoons of spice per pound of main ingredient (e.g. meat or tofu)
in your dish. Add a bit more if you like bigger flavor. Perhaps a bit more heavy handed
with Shepherd since they are more herb based and
"fluffier". We find that a tin provides enough spice for 4 to 8 or
more "full recipes" depending on the blend and how heavily we spice
the dish.
- For grilled, pan fried or roasted dishes, dry rub the spice on
the ingredients prior to cooking.
- For ground meats, mix the spice in. Additional spice can be
applied to the surface of burgers for bolder flavor.
- For rice and couscous, add spice when you add the main
ingredient to the cooking liquid.
- For an easy curry, sauté some onion, add a pound of main
ingredient and cook for a couple of minutes, followed by 2 Tbs of
spice and 1 cup of coconut milk. Simmer these together until the
main ingredient is tender. Add some additional vegetables of your
liking and serve the curry when these veggies are perfectly cooked.
